        Crisp Roast Duck
      Ingredients:
1        long island duck          2    cups boiling-hot water
1        tablespoon salt             1    teaspoon black pepper

       Steps:
1      Put oven rack in the middle position and preheat oven to 200° C.
2      Rinse duck inside and out. Prick skin all over with a sharp fork.
3      Pour boiling-hot water over duck (to tighten skin). Cool duck.
4      Rub duck inside and out with salt and pepper.
5      Roast duck, breast side up, until skin is brown and crisp, then remove from the oven.

Birds are interesting flying animals. They are vertebrates and warm blooded animals. They belong to aves class and they can be found all over the world.

Birds breath with their air pocket. Beside as respiration organ, air pocket also can enlarge or reduce their weight when flying or swimming.

There are many kinds of birds. Earth bird has special characteristic. They have different morphology according to their food and their habitat. Some of them eat seeds, pollen, fish or meat.
